Best Super-Normal, Extra fluffy, Buttermilk Pancakes: More with Less Whole Wheat Buttermilk Pancakes (minus the whole wheat)
Someone blogged the recipe here: http://ourfamilycooking.wordpress.com/2011/04/17/whole-wheat-buttermilk-pancakes/
This, my friends, is the most classic pancake around. Eat them with lots of butter (if you’re into that) and maple syrup. Light, fluffy, and comforting…my husband’s favorite.
Best “Foodie” Pancakes: Coconut Pancakes from Cookie and Kate (http://cookieandkate.com/2011/coconut-pancakes-recipe/)
I am totally in love with everything this lady makes. After trying several lackluster whole-wheat pancake recipes, I finally landed upon this one. My husband, the skeptic, grumbled a little bit about “never eating normal pancakes again,” but was hooked after one bite. “These might be the best pancakes we’ve ever made, he was humble enough to admit. They’ll make a believer out of you too!
Of course, I would be remiss to not give you a low-FODMAP option as well!
Best Hearty, Cakey, Gluten-Free Boxed Mix: Hodgson Mill Gluten Free Pancake and Waffle Mix with Milled Flax Seed
The name says it all. These are a whole-grain, gluten-free stack of yum. They work best with the addition of just a smidge more liquid and a hefty dash of vanilla. And they’re a mix, so they practically make themselves!
